- 3 ripe bananas, mashed
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup walnuts, chopped
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract (for whipped cream)
Instructions
- Preheat your oven to 350°F (175°C) and grease a cake pan. Line with parchment if desired. Mash the bananas until mostly smooth.
- Cream together the mashed bananas, sugar, and softened butter in a bowl until smooth. Beat in eggs one at a time, then stir in 1 teaspoon vanilla extract. In another bowl, whisk flour, baking soda, and salt. Gradually add dry ingredients to the banana mixture, mixing gently until just combined. Fold in walnuts.
- Pour the batter into the prepared pan and smooth the top. Bake for 25–30 minutes, or until a toothpick comes out clean. Allow to cool completely in the pan on a wire rack.
- In a chilled bowl, whip the cream with powdered sugar and 1 teaspoon vanilla extract until soft peaks form. Spread whipped cream over cooled cake, and garnish with walnuts.
Notes
Use very ripe bananas for best flavor. Chill whipped cream and equipment if your kitchen is warm.
