Description
A simple and comforting soup that turns cabbage into a fragrant broth enriched with Parmesan and fresh herbs.
Ingredients
Scale
- 1 head of cabbage, chopped
- 4 cups vegetable broth
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh herbs (like parsley or basil) for garnish
Instructions
- Gather and prep ingredients. Chop the cabbage, dice the onion, and mince the garlic.
- In a large pot, heat the olive oil over medium heat. Add onion and garlic, sauté until translucent.
- Add the chopped cabbage and cook until it begins to soften.
- Pour in the vegetable broth, add thyme, salt, and pepper, and bring to a simmer.
- Stir in the grated Parmesan cheese until melted and creamy.
- Cook for an additional 10-15 minutes until the cabbage is tender.
- Serve hot, garnished with fresh herbs and additional Parmesan if desired.
Notes
Use low-sodium broth for better control over salt. Fresh herbs at the end brighten the bowl.
