Ingredients

  • 1 cup cooked quinoa
  • 2 large eggs
  • 1/2 cup spinach, chopped
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup mozzarella cheese, shredded
  • 1/4 cup cooked sausage or turkey bacon, chopped
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Gather all ingredients and chop the spinach, tomatoes, and cooked sausage or turkey bacon. Have the quinoa warmed or at room temperature and the mozzarella ready to sprinkle.
  2. Whisk the eggs in a small bowl with a pinch of salt and pepper.
  3. Heat a small skillet over medium heat, add olive oil, and sauté the spinach until wilted. Pour in the whisked eggs and scramble gently until softly set.
