Description

A bright and fresh salad packed with satisfying protein from tender shredded chicken, sweet corn, creamy avocado, and tangy lime, finished with salty feta.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups corn (fresh, canned, or frozen)
  • 1/2 cup red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cilantro, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 avocados, diced
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked chicken, corn, red onion, cherry tomatoes, and chopped cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, chili powder, and a pinch of salt and pepper until smooth.
  3. Pour the dressing over the salad mixture and toss gently to combine.
  4. Gently fold in the diced avocado and crumbled feta. Serve immediately or refrigerate for up to a few hours before serving.

Notes

Store salad in an airtight container for up to 3 days. If including avocado, expect browning after the first day. For best results, add avocado just before serving.
