- 4 boneless, skinless chicken breasts
- 1 cup Greek yogurt
- 1 cup shredded mozzarella cheese
- 1/2 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1/2 cup fresh basil, chopped
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C). Pat the chicken breasts dry with paper towels and season with salt and pepper.
- In a bowl, mix Greek yogurt, mozzarella, sun-dried tomatoes, garlic, and basil. Season to taste.
- Heat olive oil in an oven-safe skillet over medium heat. Sear the chicken for 4–5 minutes per side until golden brown.
- Spread the yogurt mixture evenly over the chicken. Bake for 25–30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
- Let rest for 3–5 minutes before serving and garnish with extra basil if desired.
Notes
For best results, pound the chicken to an even thickness, and use full-flavor Greek yogurt. Adjust seasonings based on taste.
