Homemade Oatmeal Fig Bars

Description

Chewy and nutty oatmeal fig bars that are easy to make and perfect for snacks or breakfast on the go.


Ingredients

Scale
  • 1 cup of rolled oats
  • 1 cup of all-purpose flour
  • 1/2 cup of brown sugar
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1/2 cup of butter, melted
  • 1/2 cup of chopped dried figs
  • 1/4 cup of honey
  • 1 teaspoon of vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and lightly grease it if desired.
  2. In a large bowl, combine rolled oats, all-purpose flour, brown sugar, baking soda, and salt. Stir to mix evenly. Add melted butter, honey, and vanilla, and stir until moistened. Fold in chopped figs.
  3. Press the mixture firmly into the prepared baking pan, compacting it well. Bake for 25–30 minutes, or until golden brown on top.
  4. Allow to cool completely in the pan before lifting out and cutting into 9 bars.

Notes

Store in an airtight container for up to 3 days at room temperature or 7 days in the refrigerator. Freeze individually wrapped for up to 3 months.
