Description

Crispy on the outside and soft on the inside, these potato pancakes are a delightful side dish or snack that everyone will enjoy.


Ingredients

  • 6 medium potatoes
  • 1 onion
  • 2 eggs
  • 1/4 cup all-purpose flour
  • Salt to taste
  • Black pepper to taste
  • Oil for frying

Instructions

  1. Start by grating the potatoes and onion using a box grater or food processor.
  2. Take the grated potato and onion mixture and squeeze out as much moisture as possible.
  3. In a large bowl, combine the grated potatoes and onions with the eggs, flour, salt, and black pepper, mixing until a batter-like consistency forms.
  4. Heat oil in a frying pan over medium heat. Drop spoonfuls of the potato mixture into the oil and flatten them slightly with a spatula.
  5. Fry until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels before serving hot.

Notes

Serve with sour cream, chives, or applesauce. Store leftovers in an airtight container in the fridge for up to 3 days.
