- 6 medium potatoes
- 1 onion
- 2 eggs
- 1/4 cup all-purpose flour
- Salt to taste
- Black pepper to taste
- Oil for frying
Instructions
- Start by grating the potatoes and onion using a box grater or food processor.
- Take the grated potato and onion mixture and squeeze out as much moisture as possible.
- In a large bowl, combine the grated potatoes and onions with the eggs, flour, salt, and black pepper, mixing until a batter-like consistency forms.
- Heat oil in a frying pan over medium heat. Drop spoonfuls of the potato mixture into the oil and flatten them slightly with a spatula.
- Fry until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels before serving hot.
Notes
Serve with sour cream, chives, or applesauce. Store leftovers in an airtight container in the fridge for up to 3 days.
