- 2 Honeycrisp apples, sliced
- 4 cups mixed greens
- 1/2 cup crumbled feta cheese
- 1/4 cup walnuts, chopped
- 1/4 cup red onion, thinly sliced
- 1/4 cup balsamic vinaigrette
- Salt and pepper to taste
Instructions
- Wash the mixed greens and apples. Thinly slice the Honeycrisp apples and red onion. Chop the walnuts if necessary. Crumble the feta if it isn’t pre-crumbled.
- In a large bowl, combine mixed greens, sliced apples, crumbled feta, walnuts, and red onion.
- No cooking needed. Optionally, toast walnuts in a dry skillet over medium heat for 2–3 minutes until fragrant, then cool.
- Drizzle with balsamic vinaigrette and toss gently to combine. Season with salt and pepper to taste. Serve immediately.
Notes
For a brighter flavor, consider using a citrus vinaigrette instead of balsamic. To prevent the apples from browning, toss slices with lemon juice before assembly.
