  • 1 cup cream cheese, softened (8 oz)
  • 1 cup shredded cheddar cheese (about 4 oz)
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Tortilla chips or crackers for serving

Instructions

  1. Preheat the oven to 350°F (175°C). Drain the canned corn well. Soften the cream cheese by leaving it at room temperature for about 15–20 minutes or microwave in 10-second bursts until just soft.
  2. In a mixing bowl, combine the softened cream cheese, sour cream, garlic powder, paprika, salt, and pepper. Stir until smooth. Fold in the drained corn, shredded cheddar, and chopped green onions until everything is evenly mixed.
  3. Transfer the mixture to a small baking dish (about 8×8 inches). Smooth the top with a spatula. Place the dish in the preheated oven and bake for 20–25 minutes, or until hot, bubbly, and the top is light golden.
  4. Remove from the oven and let cool for 3–5 minutes. Garnish with extra chopped green onions or a sprinkle of paprika if desired. Serve warm with tortilla chips or crackers.

Notes

For a golden top, broil for 1–2 minutes at the end—watch closely to avoid burning. This dip is best served warm to maintain its gooey texture.
