- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup heavy cream
- 1/4 cup granulated sugar for topping
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream together the butter, 1 cup granulated sugar, and 1/2 cup brown sugar until light and fluffy. Beat in the egg and vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture until just combined. Chill the dough for about 30 minutes.
- Scoop tablespoon-sized portions onto baking sheets, spacing about 2 inches apart. Bake for 10-12 minutes until edges are golden. Let cool slightly.
- Heat the heavy cream until just hot. Drizzle over cookies and let soak briefly. Sprinkle granulated sugar on top, then caramelize using a kitchen torch or broiler.
- Allow to cool completely before serving.
Notes
For best results, keep the caramel step until just before serving to retain the crisp sugar crust.
