- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 2 (8-ounce) packages cream cheese, softened
- 1 cup canned pumpkin puree
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar; mix until well combined. Press this mixture firmly into the bottom of the prepared pan.
- In a large bowl, beat the cream cheese until smooth. Add pumpkin puree, sugar, eggs, vanilla extract, and spices; mix until smooth and creamy.
- Pour the pumpkin mixture over the crust in the baking pan and spread it evenly. Bake for 25-30 minutes until the center is set with a slight jiggle. Allow to cool completely before cutting into bars.
- Serve chilled or at room temperature and enjoy!
Notes
