Description

A beloved Caribbean dish featuring corned beef sautéed with vegetables and spices, perfect for any time of day.

Ingredients

Scale
  • 1 can corned beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 green bell peppers, chopped
  • 1 hot pepper, chopped (optional)
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 teaspoons thyme
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Cooked rice or fried dumplings for serving

Instructions

  1. Heat the vegetable oil in a pan over medium heat.
  2. Add the chopped onion, minced garlic, and chopped bell peppers to the pan. Sauté until the vegetables are soft and fragrant, about 5 minutes.
  3. Crumble the canned corned beef into the pan with the softened vegetables. Stir well to combine.
  4. Sprinkle in the black pepper, paprika, thyme, and salt. Stir to combine all ingredients thoroughly.
  5. Cook the mixture for about 10-15 minutes, stirring occasionally. The beef should be heated through and slightly browned on the edges.
  6. Serve hot with a generous helping of cooked rice or fried dumplings.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for about a month.
