Description

A delicious and hearty Jamaican dish made with corned beef and vibrant vegetables, perfect for a quick meal.


Ingredients

  • 1 can of corned beef
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, chopped
  • 2 green onions, sliced
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • Hot sauce (optional)

Instructions

  1. Heat the olive oil in a pan over medium heat.
  2. Add the chopped onion, minced garlic, and bell pepper, and sauté until the vegetables are soft.
  3. Incorporate the chopped tomatoes and cook for another 2-3 minutes, stirring occasionally.
  4. Add the can of corned beef into the pan, breaking it up with a spoon to mix well with the sautéed vegetables.
  5. Stir in thyme, black pepper, and sliced green onions. Cook until everything is heated through and blended well, about 5-7 minutes.
  6. Serve hot, optionally with a dash of hot sauce for an extra kick.

Notes

This dish is naturally gluten-free and can be made vegetarian by substituting the corned beef with lentils or chickpeas.
