Ingredients

  • 2 lbs oxtail
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 carrots, chopped
  • 2 stalks green onions, chopped
  • 1 can (15 oz) butter beans (optional)
  • 4 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato paste
  • 2 teaspoons allspice
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium-high heat. Season the oxtail with salt and pepper.
  2. Once the oil is hot, add the oxtail pieces to the pot. Brown the oxtail on all sides for about 5-7 minutes.
  3. Add the chopped onion, minced garlic, and grated ginger to the pot. Sauté until the onion becomes translucent, about 3-4 minutes.
  4. Stir in the chopped carrots and green onions, cooking for another 2-3 minutes.
  5. Pour in the beef broth, soy sauce, tomato paste, allspice, thyme, and butter beans (if using). Mix well.
  6. Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for 2 to 3 hours, until the oxtail is tender.
  7. Towards the end of cooking, taste the broth and adjust seasoning with additional salt and pepper as needed.

Notes

For deeper flavor, let the oxtail marinate in the seasoning overnight. A slow cooker can be used as an alternative cooking method.
