- 2 lbs oxtail
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 2 carrots, chopped
- 2 stalks green onions, chopped
- 1 can (15 oz) butter beans (optional)
- 4 cups beef broth
- 2 tablespoons soy sauce
- 1 tablespoon tomato paste
- 2 teaspoons allspice
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium-high heat. Season the oxtail with salt and pepper.
- Once the oil is hot, add the oxtail pieces to the pot. Brown the oxtail on all sides for about 5-7 minutes.
- Add the chopped onion, minced garlic, and grated ginger to the pot. Sauté until the onion becomes translucent, about 3-4 minutes.
- Stir in the chopped carrots and green onions, cooking for another 2-3 minutes.
- Pour in the beef broth, soy sauce, tomato paste, allspice, thyme, and butter beans (if using). Mix well.
- Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for 2 to 3 hours, until the oxtail is tender.
- Towards the end of cooking, taste the broth and adjust seasoning with additional salt and pepper as needed.
Notes
For deeper flavor, let the oxtail marinate in the seasoning overnight. A slow cooker can be used as an alternative cooking method.
