  • 1 can black beans, drained and rinsed
  • 1 onion, chopped

  • 1 bell pepper, chopped
  • 1 can coconut milk
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, and bell pepper. Sauté for 3-4 minutes until the onion is translucent.
  2. Stir in the diced sweet potatoes and jerk seasoning, ensuring they are well coated.
  3. Pour in the coconut milk and add the rinsed black beans. Bring to a gentle simmer, cover, and cook for 20-25 minutes until sweet potatoes are tender.

Notes
