Ingredients

  • 4 medium zucchinis
  • 8 slices of bacon
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup cream cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the zucchinis in half lengthwise and scoop out the seeds to create boats. Pat the zucchini halves dry with paper towels and line a baking sheet with parchment paper.
  2. In a bowl, mix the cream cheese, shredded cheese, garlic powder, salt, and pepper until smooth. Fill each zucchini half with the cheese mixture, packing it gently.
  3. Wrap each filled zucchini boat with a slice of bacon, securing it with a toothpick if needed. Place on the baking sheet and bake for 20-25 minutes until bacon is crispy and zucchini is tender.
  4. Remove from oven and let rest for 2-3 minutes. Garnish with herbs if desired and serve warm.

Notes

For extra flavor, mix in chopped chives or smoked paprika to the filling. Serve with a crisp salad or roasted cauliflower rice.
