- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- Stir in the melted butter, egg, and vanilla extract. Mix until just combined.
- Spread half of the batter into the prepared baking dish. Toss the blueberries with lemon juice and lemon zest, then pour over the batter.
- Drop spoonfuls of the remaining batter over the blueberries.
- Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
- Allow to cool before dusting with powdered sugar, if desired. Cut into squares and serve.
Notes
For a different flavor, consider mixing in lime or orange juice instead of lemon juice.
