Delightful lemon blueberry cobbler bars with a warm, buttery base, perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  3. Stir in the melted butter, egg, and vanilla extract. Mix until just combined.
  4. Spread half of the batter into the prepared baking dish. Toss the blueberries with lemon juice and lemon zest, then pour over the batter.
  5. Drop spoonfuls of the remaining batter over the blueberries.
  6. Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
  7. Allow to cool before dusting with powdered sugar, if desired. Cut into squares and serve.

Notes

For a different flavor, consider mixing in lime or orange juice instead of lemon juice.
