- 1 cup cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup sour cream
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 cup graham cracker crumbs
- 1/4 cup melted butter
Instructions
- In a mixing bowl, beat the cream cheese and sugar until smooth.
- Add sour cream, lemon juice, lemon zest, and vanilla extract; mix until well combined.
- In another bowl, mix the graham cracker crumbs with melted butter.
- Press the crumb mixture into the bottom of a small baking dish or cupcake liners.
- Pour the cheesecake filling over the crust and smooth the top.
- Refrigerate for at least 4 hours or until set.
- Cut into bite-sized pieces and serve, optionally garnished with lemon zest or whipped cream.
Notes
Store leftovers in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze tightly wrapped for up to a month, thawing in the refrigerator before serving.
