Description

Creamy, tangy, and refreshingly sweet, Lemon Cheesecake Bites are the perfect treat for any occasion.


Ingredients

Scale
  • 1 cup cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter

Instructions

  1. In a mixing bowl, beat the cream cheese and sugar until smooth.
  2. Add sour cream, lemon juice, lemon zest, and vanilla extract; mix until well combined.
  3. In another bowl, mix the graham cracker crumbs with melted butter.
  4. Press the crumb mixture into the bottom of a small baking dish or cupcake liners.
  5. Pour the cheesecake filling over the crust and smooth the top.
  6. Refrigerate for at least 4 hours or until set.
  7. Cut into bite-sized pieces and serve, optionally garnished with lemon zest or whipped cream.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze tightly wrapped for up to a month, thawing in the refrigerator before serving.
