Description

Bright, tangy, and comforting lemon cobbler combines lively lemon juice with a soft pudding-like batter.


Ingredients

  • 2 cups fresh or bottled lemon juice
  • 1 cup granulated sugar
  • 1/2 cup butter, melted
  • 1 cup all-purpose flour
  • 2 cups milk
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 lemon, zested

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch or similar baking dish with butter or nonstick spray. Zest the lemon and set the zest aside. If your butter is not melted, melt it and let it cool slightly.
  2. Combine the melted butter, granulated sugar, and lemon juice in a mixing bowl. In another bowl, whisk together the all-purpose flour, milk, baking powder, and salt until smooth. Gradually add the flour mixture into the lemon-butter mixture, stirring until blended.
  3. Pour the batter into the greased baking dish, smoothing the top lightly. Bake for 40–45 minutes, or until the top turns golden and a toothpick inserted into the center comes out with a few moist crumbs.
  4. Remove from the oven and let cool for 10–15 minutes. Sprinkle the lemon zest over the top to serve.

Notes

Serve warm with ice cream or whipped cream, and optionally top with berries or mint.
