Ingredients

  • 1/4 cup powdered sugar (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix together granulated sugar, vegetable oil, lemon zest, lemon juice, and vanilla extract until well combined.
  3. Whisk together flour, baking powder, salt, and baking soda in another bowl. Gradually add the dry ingredients to the wet mixture.
  4. Scoop tablespoon-sized portions of dough and roll them into balls.
  5. Roll each ball in powdered sugar until fully coated, then place them on the baking sheet.
  6. Bake for 10-12 minutes, or until the edges are lightly golden but the center remains soft.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
