Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix together granulated sugar, vegetable oil, lemon zest, lemon juice, and vanilla extract until well combined.
- Whisk together flour, baking powder, salt, and baking soda in another bowl. Gradually add the dry ingredients to the wet mixture.
- Scoop tablespoon-sized portions of dough and roll them into balls.
- Roll each ball in powdered sugar until fully coated, then place them on the baking sheet.
- Bake for 10-12 minutes, or until the edges are lightly golden but the center remains soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
