Ingredients

- 1 cup orzo pasta
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- 1 cup feta cheese, crumbled
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat the oven to 400°F (200°C). Cook orzo pasta according to package instructions and set aside.
- In a bowl, toss shrimp with olive oil, lemon juice, minced garlic, salt, and pepper until well-coated.
- Spread shrimp on a baking sheet in a single layer and roast in the oven for about 8-10 minutes, or until cooked through and pink.
- In a large bowl, combine cooked orzo, roasted shrimp, lemon zest, and crumbled feta cheese. Mix well and serve garnished with fresh parsley.
Notes
Serve warm with a crisp green salad or steamed vegetables. Store leftovers in an airtight container for up to 3 days.
