Description

A delightful dish combining zesty lemon, creamy feta, and succulent roasted shrimp on a bed of orzo pasta.


Ingredients

  • 1 cup orzo pasta
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 1 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Cook orzo pasta according to package instructions and set aside.
  2. In a bowl, toss shrimp with olive oil, lemon juice, minced garlic, salt, and pepper until well-coated.
  3. Spread shrimp on a baking sheet in a single layer and roast in the oven for about 8-10 minutes, or until cooked through and pink.
  4. In a large bowl, combine cooked orzo, roasted shrimp, lemon zest, and crumbled feta cheese. Mix well and serve garnished with fresh parsley.
