Ingredients

  • 1 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1/2 cup all-purpose flour
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • Pinch of salt

Instructions

  1. Preheat the oven to 425°F (220°C). Grease and flour four ramekins and place them on a baking sheet.
  2. Melt the butter in a microwave-safe bowl and stir in the powdered sugar until smooth. Whisk in the eggs and extra egg yolks until glossy.
  3. Mix in the flour, fresh lemon juice, lemon zest, and salt until just combined.
  4. Pour the batter evenly into the ramekins and bake for about 12 minutes until edges are firm but the center is soft.
  5. Let the cakes sit for 1 minute before inverting onto plates and serve immediately.

Notes
