- 1 cup powdered sugar
- 2 large eggs
- 2 large egg yolks
- 1/2 cup all-purpose flour
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- Pinch of salt
Instructions
- Preheat the oven to 425°F (220°C). Grease and flour four ramekins and place them on a baking sheet.
- Melt the butter in a microwave-safe bowl and stir in the powdered sugar until smooth. Whisk in the eggs and extra egg yolks until glossy.
- Mix in the flour, fresh lemon juice, lemon zest, and salt until just combined.
- Pour the batter evenly into the ramekins and bake for about 12 minutes until edges are firm but the center is soft.
- Let the cakes sit for 1 minute before inverting onto plates and serve immediately.
Notes
Serve hot for a molten center. Dust with powdered sugar or add whipped cream for extra contrast. Pairs well with berries or ice cream.
