Ingredients

- 2 cups all-purpose flour
- 1 tablespoon poppy seeds
- 1 tablespoon lemon zest
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1 tablespoon sugar
- 3/4 teaspoon salt
- 3/4 cup warm water
- 1 tablespoon honey
- Extra flour for dusting
Instructions
- In a bowl, mix warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
- In a large bowl, combine flour, poppy seeds, lemon zest, and salt. Add yeast mixture and honey; mix until a dough forms.
- Knead the dough for 8–10 minutes until smooth and elastic. Let it rise in a greased bowl for 1 hour until doubled.
- Preheat the oven to 425°F (220°C). Punch down the dough, divide it, and shape into bagels. Boil each bagel for 1–2 minutes on each side.
- Remove and drain briefly, then place on a baking sheet. Bake for 15–20 minutes until golden brown. Cool for 10 minutes before slicing.
Notes
Serve warm with cream cheese or honey. Great for breakfast or brunch gatherings.
