Description

Bright and tender muffins with a light crunch from poppy seeds and a fresh lemon flavor, perfect for breakfast or snack time.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup poppy seeds
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 2 tablespoons lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or grease it.
  2. In a large bowl, whisk together dry ingredients: flour, sugar, baking powder, baking soda, salt, and poppy seeds.
  3. In another bowl, mix wet ingredients: milk, vegetable oil, egg, lemon juice, and lemon zest until smooth.
  4. Combine wet and dry mixtures, stir gently until just combined; avoid overmixing.
  5. Fill muffin cups two-thirds full with batter and smooth the tops.
  6. Bake for 18–20 minutes or until a toothpick comes out clean.
  7. Let cool in the tin for 5 minutes, then transfer to a wire rack.
