Ingredients

  • 8 oz orzo pasta
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the orzo according to package instructions. Once cooked, drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, ensuring not to let it brown.
  3. Add the shrimp to the skillet and cook until pink, about 3–4 minutes.
  4. Stir in the lemon juice, lemon zest, cherry tomatoes, and spinach. Cook until the spinach wilts.
  5. Toss in the cooked orzo, season with salt and pepper, and mix well.
  6. Garnish with freshly chopped parsley before serving.

Notes

Use fresh shrimp for best flavor. Adjust lemon to taste. Can substitute shrimp with chicken or tofu.
