Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the lemon zest, lemon juice, fresh thyme, and chopped rosemary.
  4. Whisk together the flour, baking powder, and salt in another bowl. Gradually add to the wet mixture, alternating with the buttermilk.
  5. Fill the cupcake liners about two-thirds full with batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
