Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, mix the grated zucchini, granulated sugar, vegetable oil, eggs, and vanilla extract until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, lemon zest, and lemon juice. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
