Description

Ingredients

  • 1 ripe avocado

  • Salt and pepper to taste

Instructions

  1. Slice the cucumber lengthwise into thin strips using a mandoline or vegetable peeler. Aim for long, even ribbons so they roll easily. Pat the strips dry with a paper towel to remove excess moisture.
  2. Mash the avocado in a bowl and mix in lime juice, salt, and pepper. Taste and adjust seasoning.
  3. Spread a thin layer of the avocado mixture on each cucumber strip. Roll the cucumber slices tightly and secure with a toothpick if needed.
  4. Garnish with fresh herbs and serve immediately. Add a sprinkle of cracked pepper or smoked paprika for extra flavor.
