Description
A lightened take on the classic Irish beef stew featuring tender lean beef and a variety of vegetables.
Ingredients

- 1 lb lean beef stew meat, cut into cubes
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups beef broth
- 2 cups potatoes, diced
- 2 cups green peas
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Season the beef lightly with salt and pepper. Prepare the vegetables.
- Add the chopped onion to the hot oil and cook until softened (about 4–5 minutes). Add the beef cubes and brown on all sides. Stir in minced garlic, carrots, and celery, and cook for another 4–5 minutes.
- Pour in the beef broth and add the diced potatoes, thyme, rosemary, and additional seasoning. Bring to a gentle boil, reduce heat to low, cover, and simmer for about 1 hour 30 minutes.
- Stir in the green peas and simmer uncovered for an additional 10 minutes until heated through. Serve warm.
Notes
For a thicker stew, mash a few potatoes in the pot or stir in a cornstarch slurry. Add peas at the end to maintain their bright color.
