Description

A refreshing salad that combines grilled zucchini, Little Gem lettuce, and feta cheese, perfect for summer barbecues or a light lunch.


Ingredients

  • Little Gem lettuce
  • Courgette (zucchini)
  • Feta cheese
  • Olive oil
  • Lemon juice
  • Salt
  • Pepper
  • Sesame seeds (optional)

Instructions

  1. Preheat a grill or griddle pan over medium heat.
  2. Slice the courgette into thin rounds and brush them lightly with olive oil. Grill the slices until tender with grill marks, about 2-3 minutes per side.
  3. Wash and chop the Little Gem lettuce into bite-sized pieces.
  4. In a large bowl, combine the grilled courgette and lettuce. Crumble feta over the top, drizzle with olive oil and lemon juice, season with salt and pepper, and toss gently.
  5. Serve immediately, optionally garnished with sesame seeds.

Notes

Store leftovers in an airtight container for up to 2 days, but it’s best enjoyed fresh.
