Description
A refreshing salad that combines grilled zucchini, Little Gem lettuce, and feta cheese, perfect for summer barbecues or a light lunch.
Ingredients
- Little Gem lettuce
- Courgette (zucchini)
- Feta cheese
- Olive oil
- Lemon juice
- Salt
- Pepper
- Sesame seeds (optional)
Instructions
- Preheat a grill or griddle pan over medium heat.
- Slice the courgette into thin rounds and brush them lightly with olive oil. Grill the slices until tender with grill marks, about 2-3 minutes per side.
- Wash and chop the Little Gem lettuce into bite-sized pieces.
- In a large bowl, combine the grilled courgette and lettuce. Crumble feta over the top, drizzle with olive oil and lemon juice, season with salt and pepper, and toss gently.
- Serve immediately, optionally garnished with sesame seeds.
Notes
Store leftovers in an airtight container for up to 2 days, but it’s best enjoyed fresh.
