Instructions
- In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant. Add the broccoli and vegetable broth, bringing to a boil before simmering for 10-15 minutes until broccoli is tender.
- In a separate bowl, whisk the milk and flour until smooth. Slowly add this to the soup while stirring to avoid lumps.
- Add the mustard powder and season with salt and pepper. Gradually stir in the cheese, mixing until melted. Serve hot with optional toppings.
