Description

A comforting and creamy soup that blends the earthy flavors of broccoli with sharp cheddar cheese, perfect for busy weeknights or cozy weekends.

Ingredients

Scale
  • 2 cups broccoli florets
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons all-purpose flour
  • 1 teaspoon mustard powder
  • Salt and pepper to taste
  • Olive oil
  • Optional toppings: croutons, more cheese, bacon bits

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant. Add the broccoli and vegetable broth, bringing to a boil before simmering for 10-15 minutes until broccoli is tender.
  3. In a separate bowl, whisk the milk and flour until smooth. Slowly add this to the soup while stirring to avoid lumps.
  4. Add the mustard powder and season with salt and pepper. Gradually stir in the cheese, mixing until melted. Serve hot with optional toppings.

Notes

For a smoother texture, blend the soup after cooking. Adjust thickness by varying flour or milk amounts. Use fresh broccoli for best flavor.
