- 4 small potatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup shredded cheese
- 1/2 cup sour cream
- 1 cup guacamole
- Chopped green onions for garnish
Instructions
- Preheat the grill to medium-high heat.
- Rinse the potatoes under cold water and poke holes in each.
- Drizzle olive oil over the potatoes and season with salt and pepper.
- Wrap each potato in aluminum foil and grill for 30-40 minutes, turning occasionally.
- Once done, unwrap and cut the potatoes open, fluffing the insides.
- Top with cheese, sour cream, and guacamole, and garnish with green onions before serving.
Notes
For crispy skins, grill potatoes without foil for the last 10 minutes.
