Description

Hearty grilled potatoes topped with cheese, sour cream, and guacamole for a smoky and flavorful dish.


Ingredients

  • 4 small potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 cup guacamole
  • Chopped green onions for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. Rinse the potatoes under cold water and poke holes in each.
  3. Drizzle olive oil over the potatoes and season with salt and pepper.
  4. Wrap each potato in aluminum foil and grill for 30-40 minutes, turning occasionally.
  5. Once done, unwrap and cut the potatoes open, fluffing the insides.
  6. Top with cheese, sour cream, and guacamole, and garnish with green onions before serving.

Notes

For crispy skins, grill potatoes without foil for the last 10 minutes.
