Description

A delightful and hearty dish combining creamy baked potatoes with savory taco-seasoned meat, black beans, corn, and gooey cheese.


Ingredients

  • 2 large potatoes
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn (canned or frozen)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Tortilla chips for serving
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and pierce the potatoes several times with a fork.
  2. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, until they are tender.
  3. In a skillet over medium heat, cook the ground beef or turkey until browned. Stir in the taco seasoning and a splash of water, simmering for 5 minutes.
  4. Once the potatoes are done, let them cool. Cut in half, scoop out the flesh, and mash it with salt and pepper.
  5. Stir in black beans, corn, and half of the shredded cheese into the potato mixture.
  6. Spoon the potato mixture into bowls or potato skins, top with seasoned meat, remaining cheese, sour cream, and green onions.
  7. Serve with tortilla chips on the side.
