- 2 large potatoes
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup black beans (drained and rinsed)
- 1 cup corn (canned or frozen)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Tortilla chips for serving
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Wash and pierce the potatoes several times with a fork.
- Place the potatoes directly on the oven rack and bake for about 45-60 minutes, until they are tender.
- In a skillet over medium heat, cook the ground beef or turkey until browned. Stir in the taco seasoning and a splash of water, simmering for 5 minutes.
- Once the potatoes are done, let them cool. Cut in half, scoop out the flesh, and mash it with salt and pepper.
- Stir in black beans, corn, and half of the shredded cheese into the potato mixture.
- Spoon the potato mixture into bowls or potato skins, top with seasoned meat, remaining cheese, sour cream, and green onions.
- Serve with tortilla chips on the side.
