  • 1/2 cup cooked lobster meat, chopped
  • 3 tablespoons mayonnaise

  • Salt and pepper to taste

Instructions

  1. Cut the hard-boiled eggs in half lengthwise and remove the yolks. Place the yolks in a mixing bowl and save the egg whites on a tray.
  2. Mash the yolks with a fork until crumbly. Add the mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Mix until smooth and creamy.
  3. Gently fold in the chopped lobster meat, being careful not to overmix.
  4. Spoon or pipe the mixture back into the egg whites, mounding it slightly. Sprinkle with paprika and garnish with chopped chives. Chill before serving.
