- 1 lb salmon fillet
- 2 tablespoons maple syrup
- 1 tablespoon sriracha sauce
- 1 tablespoon olive oil
- 1 mango, diced
- 1/4 red onion, finely chopped
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly oil it.
- Pat the salmon dry and check for any bones to remove.
- Dice the mango, finely chop the red onion and cilantro, and squeeze the lime.
- Whisk together the maple syrup, sriracha, olive oil, salt, and pepper in a bowl until smooth.
- Cut the salmon into bite-sized pieces and toss them in the maple-sriracha mixture until coated.
- Arrange the salmon bites in a single layer on the prepared baking sheet.
- Bake for 12–15 minutes or until opaque and flakes easily.
- Combine the diced mango, red onion, cilantro, lime juice, salt, and pepper in a bowl while the salmon bakes.
- Serve the salmon bites with mango salsa over rice, greens, or in a grain bowl.
Notes
For optimal texture, store salmon and salsa separately and refrigerate. Reheat salmon gently to avoid dryness.
