Ingredients

  • 8 oz pasta of your choice
  • 1 lb chickpeas (canned or cooked)
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach or kale, chopped
  • 3 cloves garlic, minced
  • 1/2 cup vegan cream (coconut or cashew-based)
  • 1/4 cup nutritional yeast
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh basil for garnish

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and add minced garlic. Sauté until fragrant.
  3. Add chickpeas, cherry tomatoes, and spinach to the skillet. Cook until spinach wilts and tomatoes soften.
  4. Stir in the vegan cream, nutritional yeast, and Italian seasoning. Mix well and let it simmer for a few minutes.
  5. Add the cooked pasta to the skillet and toss everything together. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh basil.

Notes
