- 8 oz pasta of your choice
- 1 lb chickpeas (canned or cooked)
- 1 cup cherry tomatoes, halved
- 1 cup spinach or kale, chopped
- 3 cloves garlic, minced
- 1/2 cup vegan cream (coconut or cashew-based)
- 1/4 cup nutritional yeast
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
- Fresh basil for garnish
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat and add minced garlic. Sauté until fragrant.
- Add chickpeas, cherry tomatoes, and spinach to the skillet. Cook until spinach wilts and tomatoes soften.
- Stir in the vegan cream, nutritional yeast, and Italian seasoning. Mix well and let it simmer for a few minutes.
- Add the cooked pasta to the skillet and toss everything together. Season with salt and pepper to taste.
- Serve hot, garnished with fresh basil.
Notes
Serve warm with a salad or garlic bread. To store, place in an airtight container in the refrigerator for up to three days.
