Description

Warm and flavorful muffins that combine the beloved tastes of fall with the unique umami of matcha and sweet white chocolate.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon matcha green tea powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup pumpkin puree
  • 2/3 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 3/4 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, matcha powder, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, mix the wet ingredients: pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, milk, and vanilla extract until smooth.
  4. Combine the wet mixture into the dry ingredients and stir until just combined. Fold in white chocolate chips.
  5. Fill muffin cups 3/4 full with the batter and bake for 20-22 minutes.
  6. Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

Store in an airtight container for up to 4 days or freeze for up to 3 months. Can substitute matcha with spirulina or omit. Add nuts or different spices for variations.
