Description

A bright and crunchy Mediterranean salad with celery, cherry tomatoes, olives, and feta, dressed in lemon and olive oil.


Ingredients

  • 4 cups celery, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, combine the chopped celery, halved cherry tomatoes, diced red onion, sliced Kalamata olives, and crumbled feta cheese.
  2. In a small bowl, whisk together the olive oil, lemon juice, and a pinch of salt and pepper until slightly combined.
  3. No cooking needed for this salad. Pour the dressing over the prepared vegetables and toss gently to coat everything evenly.
  4. Garnish with chopped fresh parsley and give the salad one final gentle toss. Let it sit for 5–10 minutes or serve immediately.

Notes

Use firm, cold celery for the best crunch. Dressing can be stored separate for longer freshness.
