A bright and simple weeknight meal that blends savory browned beef with sweet cherry tomatoes, crunchy bell peppers, and tender zucchini, enhanced with garlic and oregano.

- 1 lb ground beef
- 1 cup bell peppers, sliced
- 1 cup zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat 2 tablespoons olive oil in a large skillet over medium heat. Chop the onion, mince the garlic, slice the bell peppers and zucchini, and halve the cherry tomatoes. Have the oregano, salt, and pepper ready.
- Add the chopped onion and minced garlic to the hot skillet. Sauté for about 2 minutes, stirring, until the onion softens and the garlic smells fragrant.
- Add the ground beef to the skillet. Break it up and cook until browned and no longer pink, about 5–6 minutes. Drain excess fat if desired. Stir in the bell peppers, zucchini, and cherry tomatoes. Sprinkle in oregano and season with salt and pepper to taste. Cook for another 4–5 minutes, stirring occasionally.
- Taste and adjust seasoning. Remove from heat and garnish with fresh parsley. Serve hot.
Notes
Works well for meal prep. Serve over rice, couscous, or warm pita. For lighter meals, serve over greens.
