- 2 ribeye steaks
- 3 tablespoons miso paste
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 1 tablespoon sesame oil
- 200 grams soba noodles
- 1 cucumber, julienned
- 1 red bell pepper, sliced
- 4 green onions, sliced
- 1 tablespoon sesame seeds
- Coriander for garnish
Instructions
- In a bowl, mix the miso paste, soy sauce, mirin, and sesame oil. Marinate the steaks in this mixture for at least 30 minutes.
- Cook soba noodles according to the package instructions. Rinse under cold water and set aside.
- Heat a grill or pan over medium-high heat. Sear the marinated steaks for about 4-5 minutes on each side. Let them rest before slicing.
- In a large bowl, combine the cooked soba noodles, cucumber, bell pepper, and green onions. Toss with the remaining marinade.
- Slice the rested steak against the grain and serve on top of the noodle salad. Garnish with sesame seeds and fresh coriander.
Notes
For a spicier kick, add chili paste to the marinade. Leftovers can be stored separately in airtight containers.
