Description

A delightful dish that blends savory flavors and fresh textures, featuring marinated ribeye steaks and a refreshing soba noodle salad.


Ingredients

  • 2 ribeye steaks
  • 3 tablespoons miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon sesame oil
  • 200 grams soba noodles
  • 1 cucumber, julienned
  • 1 red bell pepper, sliced
  • 4 green onions, sliced
  • 1 tablespoon sesame seeds
  • Coriander for garnish

Instructions

  1. In a bowl, mix the miso paste, soy sauce, mirin, and sesame oil. Marinate the steaks in this mixture for at least 30 minutes.
  2. Cook soba noodles according to the package instructions. Rinse under cold water and set aside.
  3. Heat a grill or pan over medium-high heat. Sear the marinated steaks for about 4-5 minutes on each side. Let them rest before slicing.
  4. In a large bowl, combine the cooked soba noodles, cucumber, bell pepper, and green onions. Toss with the remaining marinade.
  5. Slice the rested steak against the grain and serve on top of the noodle salad. Garnish with sesame seeds and fresh coriander.

Notes

For a spicier kick, add chili paste to the marinade. Leftovers can be stored separately in airtight containers.
