Description

A festive, herb-scented flatbread that is soft and pillowy inside with a golden, slightly crisp crust, making it perfect for gatherings.


Ingredients

  • 2 cups warm water
  • 1 packet active dry yeast
  • 1 tablespoon sugar
  • 5 cups all-purpose flour
  • 2 teaspoons salt
  • 1/4 cup olive oil
  • Fresh herbs (rosemary, thyme)
  • Olives, sun-dried tomatoes, or other toppings

Instructions

  1. In a large bowl, combine warm water, yeast, and sugar. Let it sit for about 5 minutes until frothy.
  2. Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms and knead on a floured surface for about 10 minutes until smooth.
  3. Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size. Preheat the oven to 400°F (200°C).
  4. Punch down the dough, spread it in a greased baking pan, dimple the surface, drizzle with olive oil, and sprinkle with herbs and toppings. Let it rest for another 20–30 minutes.
  5. Bake for 20–25 minutes until golden brown. Let cool slightly before serving.

Notes

Serve warm for the best texture. This focaccia pairs well with soups, salads, or as a sandwich base. It can be stored at room temperature for up to 2 days or refrigerated for up to 5 days.
