Description

Delicious slice-and-bake cookies featuring chewy oats and sweet-tart dried cherries, perfect for fresh-baked treats with minimal fuss.


Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup dried cherries
  • 1/2 cup chocolate chips (optional)

Instructions

  1. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy. Beat in the vanilla extract.
  2. In another bowl, combine the rolled oats, all-purpose flour, baking soda, and salt. Gradually mix the dry ingredients into the butter-sugar mixture until well combined. Stir in the dried cherries and chocolate chips if using.
  3. Divide the dough in half and shape each half into a log about 1 1/2 inches in diameter. Wrap each log tightly in plastic wrap and chill in the refrigerator for at least 2 hours.
  4. Preheat the oven to 350°F (175°C). Slice the chilled dough logs into 1/2-inch-thick rounds and place them on a baking sheet lined with parchment paper. Bake for 10–12 minutes until the edges turn golden and the centers set. Allow cookies to cool for 3–5 minutes before transferring them to a wire rack.

Notes

Store cooled cookies in an airtight container for up to 4 days or refrigerate for up to 1 week. You can freeze the unbaked logs for later use.
