Description

Light and fluffy old-fashioned pancakes with a golden-brown exterior and gentle sweetness, perfect for a comforting breakfast.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly mixed.
  2. In another bowl, beat the milk, egg, melted butter, and vanilla extract until combined. Pour the wet ingredients into the dry ingredients and stir until just combined.
  3. Spoon or pour about 1/4 cup of batter onto the heated skillet for each pancake. Cook until bubbles form and the edges look set, about 2–3 minutes. Flip carefully and cook until golden brown, about 1–2 more minutes.
  4. Transfer cooked pancakes to a plate and keep warm in a low oven if making a large batch. Serve warm with toppings of your choice.

Notes

For extra tenderness, substitute half the milk with buttermilk. Let batter rest for 5–10 minutes to hydrate the flour.
