- 1 tablespoon olive oil
- 1 cup diced onion
- 2 cloves garlic, minced
- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup spinach, chopped
- 1 package (16 oz) gnocchi
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/4 cup grated Parmesan cheese
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent and the garlic is fragrant.
- Stir in the shredded chicken and pour in the chicken broth. Bring to a gentle simmer to meld flavors.
- Add the gnocchi and cook until they float, about 2-3 minutes.
- Stir in the heavy cream, chopped spinach, salt, black pepper, and nutmeg. Cook for another 2-3 minutes until heated through and spinach wilts. Serve hot, garnished with Parmesan.
Notes
Serve with crusty bread or a fresh side salad. Add extra Parmesan or red pepper flakes for heat. Store leftovers in an airtight container for up to 3 days.
