Description

A creamy, comforting soup featuring tender gnocchi, succulent chicken, and fresh spinach in a rich broth.


Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1 package (16 oz) gnocchi
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent and the garlic is fragrant.
  2. Stir in the shredded chicken and pour in the chicken broth. Bring to a gentle simmer to meld flavors.
  3. Add the gnocchi and cook until they float, about 2-3 minutes.
  4. Stir in the heavy cream, chopped spinach, salt, black pepper, and nutmeg. Cook for another 2-3 minutes until heated through and spinach wilts. Serve hot, garnished with Parmesan.

Notes

Serve with crusty bread or a fresh side salad. Add extra Parmesan or red pepper flakes for heat. Store leftovers in an airtight container for up to 3 days.
