- 4 boneless, skinless chicken breasts
- 8 ounces mushrooms, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken breasts with salt and pepper, then add to the skillet. Cook until browned, about 5-7 minutes per side. Remove chicken and set aside.
- In the same skillet, add mushrooms and garlic, and sauté for about 3-4 minutes until mushrooms are softened.
- Pour in chicken broth and add dried thyme. Stir to combine.
- Return chicken to the skillet, cover, and simmer for about 10-15 minutes, or until chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
For a creamy sauce, stir in a splash of heavy cream before serving. Adjust herbs to taste.
