A delightful, savory one-skillet chicken dish with mushrooms and garlic, perfect for busy weeknights.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 ounces mushrooms, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken breasts with salt and pepper, then add to the skillet. Cook until browned, about 5-7 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add mushrooms and garlic, and sauté for about 3-4 minutes until mushrooms are softened.
  4. Pour in chicken broth and add dried thyme. Stir to combine.
  5. Return chicken to the skillet, cover, and simmer for about 10-15 minutes, or until chicken is cooked through.
  6. Garnish with fresh parsley before serving.

Notes

For a creamy sauce, stir in a splash of heavy cream before serving. Adjust herbs to taste.
