- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil leaves
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) to prepare for baking the chicken.
- In a large oven-safe skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about a minute until fragrant.
- Season the chicken breasts generously with salt, pepper, and Italian seasoning. Place them in the skillet, cooking for 4-5 minutes on each side until golden brown.
- Scatter the halved cherry tomatoes around the chicken in the skillet. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove the skillet from the oven. Sprinkle mozzarella cheese and fresh basil leaves on top, then return it to the oven for an additional 5 minutes until the cheese is melted and bubbly.
- Serve hot, alongside crusty bread or over a bed of rice for a complete meal.
Notes
For extra flavor, consider marinating the chicken in olive oil, garlic, and herbs before cooking. Watch the chicken closely while baking to avoid overcooking.
