A delightful dish that combines pasta with the zesty flavors of tacos, perfect for busy weeknights.


Ingredients

  • 8 oz pasta (elbow or rotini)
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 1/2 cups chicken broth
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped cilantro (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the ground beef or turkey and cook until browned, stirring occasionally.
  2. Stir in the taco seasoning and cook for an additional 1-2 minutes.
  3. Add the pasta, salsa, chicken broth, black beans, and corn to the skillet; stir well. Bring to a boil, then reduce heat and simmer until pasta is cooked, about 10-12 minutes.
  4. Remove from heat and stir in shredded cheese until melted. Season with salt and pepper and garnish with chopped cilantro before serving.

Notes

Can be served on its own or with a side salad. Top with sour cream or avocado for added flavor.
