  • 2 lbs chicken thighs or drumsticks
  • 2 tablespoons curry powder
  • 1 teaspoon allspice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion, garlic, and bell pepper, and sauté until softened, about 3-5 minutes.
  2. Sprinkle in the curry powder and allspice, stirring for 1 minute.
  3. Add the chicken pieces to the pot, season with salt and pepper, and brown on all sides for about 5-7 minutes.
