- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/3 cup butter, melted
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1/2 cup orange juice
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
- 1 cup whipped cream
Instructions
- Preheat your oven to 325°F (160°C). In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix well and press firmly into the bottom of mini cheesecake pans to form a crust.
- In a large bowl, beat the softened cream cheese with 1/2 cup of sugar using an electric mixer until smooth and creamy.
- Add orange juice, orange zest, and vanilla extract to the cream cheese mixture. Mix well and fold in the whipped cream until light and airy. Pour over the crusts in mini pans, filling each about three-quarters full.
- Bake for 20-25 minutes until the center is set but slightly jiggly. Allow to cool for 15 minutes, then refrigerate for at least 2 hours before serving.
