- 1 cup ricotta cheese
- 1/2 cup sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Zest of 1 orange
- 1 cup diced peaches (fresh or canned)
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. If using canned peaches, drain them and pat dry with a paper towel. Zest the orange and set aside.
- In a large bowl, beat together the ricotta cheese, sugar, and softened butter until smooth. Add the egg and vanilla extract, mixing until combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and orange zest. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the diced peaches. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12–15 minutes or until the edges are lightly golden and the centers are set.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.
Notes
For extra orange aroma, consider adding orange extract. Chill the dough if it’s too soft for easier scooping.
